Sweet Potato Apple Hash

Ingredients

  • 3 sweet potatoes
  • 2 apples
  • 1 lb sausage of choice recommend Jimmy Dean's Sage Sausage.
  • 2-3 tbsp coconut oil or cooking oil of choice.
  • 2 tbsp italian seasoning
  • 2 tsp salt

Instructions

  • Heat skillet with coconut oil
  • Chop the three sweet potatoes into medium sized chunks
  • When oil is melted and hot, put sweet potatoes in the skillet, toss to coat all the sweet potatoes in the oil.
  • Place a cover on the skillet to cook the sweet potatoes. This will help because the sweet potatoes tend to get burned if left uncovered. Cook for about 10 minutes and flip potatoes occasionally to cook evenly.
  • While potatoes are cooking, heat up an additional skillet and start browning the sausage.
  • While both sausage and potatoes are cooking, chop up the apples.
  • When potatoes are almost done, season with 1 tbsp of italian seasoning and 1 tsp salt.
  • Once the sausage and potatoes are done add the sausage to the potato pan and stir to combine.
  • Season with the last 1 tbsp of italian seasoning and 1 tsp salt.
  • Turn off the skillet and stir in chopped up apples.
  • Let the apples get a little warm, but do not let them heat through too much. The apple flavor and crisp is a nice contrast with the savory sausage.
