This savory gluten free, dairy free sweet potato apple hash is the perfect Fall meal to whip up in 20 minutes!
Gluten Free and Dairy Free Breakfasts
Gluten and dairy free eating is a big transition! Breakfast is one of the hardest things to figure out what to cook if you are gluten and dairy free. Especially if you are doing a elimination diet and you also can’t have eggs! Let me tell you what. THAT is challenging.
This sweet potato apple hash was my saving grace for breakfasts when I was on the Whole 30. As I started my clean eating journey a few years later is remained a staple in my kitchen rotation of meals and is still to this day a go-to breakfast for me.
It has everything you want in a hardy meal. Protein and fats (sausage), gluten free carbs (sweet potatoes and apples), and all the good vitamins that come with it!
This meal is also a great fall dinner meal! If you end up having left overs, you can reheat it in the morning and add eggs!
And egg placed over this hearty spread of sweet potatoes, sausage and apples gives this dish a delicious saucey layer, espeically when the egg yolk is broken!
This sweet potato apple hash really doesn’t need much more embellishment
Ingredients
To make this sweet potato apple hash you will need the flowing ingredients:
- 3 sweet potatoes
- 2 apples
- 1 lb sausage of choice (recommend Jimmy Dean’s Sage Sausage).
- 2-3 tbsp coconut oil (or cooking oil of choice).
- 2 tbsp italian seasoning
- 2 tsp salt
How to make Sweet Potato Apple Hash
- Heat skillet with coconut oil
- Chop the three sweet potatoes into medium sized chunks
- When oil is melted and hot, put sweet potatoes in the skillet, toss to coat all the sweet potatoes in the oil.
- Place a cover on the skillet to cook the sweet potatoes. This will help because the sweet potatoes tend to get burned if left uncovered. Cook for about 10 minutes and flip potatoes occasionally to cook evenly.
- While potatoes are cooking, heat up an additional skillet and start browning the sausage.
- While both sausage and potatoes are cooking, chop up the apples.
- When potatoes are almost done, season with 1 tbsp of italian seasoning and 1 tsp salt.
- Once the sausage and potatoes are done add the sausage to the potato pan and stir to combine.
- Season with the last 1 tbsp of italian seasoning and 1 tsp salt.
- Turn off the skillet and stir in chopped up apples.
- Let the apples get a little warm, but do not let them heat through too much. The apple flavor and crisp is a nice contrast with the savory sausage.
Optional additions to the sweet potato apple hash
Onion is always a great addition to a meal like this. The sweet and tangy onions and another level of flavor that is so tasty! However, the recipe above really stands on it’s on if you are out of onions.
Garnish with fresh herbs! We are still reaping the benefits of the herb garden outside. Adding fresh rosemary and fresh thyme leaves brings a delightful depth to this dish that is hard to describe. If you haven’t picked up on how much I love fresh herbs… well now you know!
Lastly, I have made this with regular potatoes too when I have been out of sweet potatoes. It is also very delicious!
