Mango Salsa

Salsas are one of the healthiest snacks or a delicious topping to a fancy dish! This mango salsa is the perfect summer salsa to enjoy wtih chips, on a salad or ontop a salmon fillet.

Equipment

Ingredients

  • 1 red bell pepper
  • 1 small red onion
  • 3 small to medium ripe mangos
  • 1 jalapeno pepper
  • 3 tbsp of chopped cilantro or parsley
  • 2 tbsp of chopped mint leaves
  • 1 tbsp honey

Instructions

  • Wash all of the produce and dry off the cliantro or parsley leaves
  • Peel the mango with a knife and shave off the meat of the mango until you get close to the core.
  • Chop shaved mango pieces.
  • Chop the rest of the veggies and produce (red bell pepper, jalapeno, onion, cliantro)
  • Mix all the chopped produce together in a mixing bowl
  • Measure out the 1 tbsp of honey and stir it in with the other ingredients.
  • Enjoy!

Notes

The core of mangos are kind of fuzzy and bark like. You will know you are getting close to the core when it gets tougher to cut. The sweetest part of the mango is the softest part. You can still eat the meat of the mango that is tougher but it will taste a little bitter.
** For puree option, follow steps 1-4. Then instead of mixing all the ingredients in a bowl, place them in a food processor and use the pulse function until it is a nice smooth consistency.
