1
large can
28 oz of fire-roasted diced tomatoes. (I like the Muir Glen brand.)
1.5
red bell pepper
1
medium onion
1.5
tbsp
minced garlic
3/4
tsp
cumin
1/2
tsp
salt
1/4
tsp
chili powder
sprinkle black pepper
Instructions
Chop onion and bell peppers.
Put onions and bell peppers in a food processor and use the pulse until they are a fine consistency but not juicy yet.
Add in the can of tomatoes.
Pulse until you get a salsa-like consistency.
Add in garlic, and seasoning (to taste), and pulse to combine making sure it doesn't get too watery.
Taste test along the way.
Enjoy!
