Ingredients

  • 1 large can 28 oz of fire-roasted diced tomatoes. (I like the Muir Glen brand.)
  • 1.5 red bell pepper
  • 1 medium onion
  • 1.5 tbsp minced garlic
  • 3/4 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp chili powder
  • sprinkle black pepper

Instructions

  • Chop onion and bell peppers.
  • Put onions and bell peppers in a food processor and use the pulse until they are a fine consistency but not juicy yet.
  • Add in the can of tomatoes.
  • Pulse until you get a salsa-like consistency.
  • Add in garlic, and seasoning (to taste), and pulse to combine making sure it doesn't get too watery.
  • Taste test along the way.
