Ever since I discovered this iced coffee recipe this past summer I have enjoyed it nearly every day! For the original recipe check it out here.
With each season I have adapted it to the flavors of the season. This past fall I made a cinnamon maple syrup recipe. Now by popular demand, this winter I have made two new christmas recipes: peppermint mocha and gingerbread!

Peppermint Mocha
There is noting quite like the taste and smell of peppermint during the holiday season. Candles, cookies, and essential oil diffusers are pumped full with peppermint.
This refreshing flavor is even better to sip slowly in this peppermint mocha iced coffee.
Here are the ingredients you will need:

- 1 tbsp + 1 tsp instant coffee
- 2 tsp coco powder
- 2 tsp raw sugar
- 4 drops of peppermint extract (or food grade peppermint essential oil).
- 2-3 tsp of half and half (or milk alternative of your choice).
- 1 drop of vanilla extract
- 1 cup ice water
How to make
Making this is super simple! All you do is put all the ingredients together in a blender and blend for 15 seconds! Pour over a few ice cubes in a glass and enjoy!
If you want to be a little more nuanced with what order you put the ingredients in here is the order I do it in:
- Instant coffee
- coco powder
- raw sugar
- cream/milk
- ice water
- peppermint extract
- vanilla extract
This order leads to a good consistency when blending.
Pro tip: to add a little extra peppermint, crush a candy cane and sprinkle the crystals on top!

Equipment
- blender (or shaker bottle)
- measuring spoons
Ingredients

Gingerbread Iced Coffee
Gingerbread is a flavor that is so unique and so warming! The spices of ginger, cinnamon and clove give a really nice warmth to this sweet and delicious iced coffee.
Here are the ingredients you will need:
- 1 tbsp + 1 tsp instant coffee
- 1.5 tsp of molasses
- 2 tsp raw sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- Sprinkle of ground cloves (be careful to not get too much of the cloves, they are strong!).
- 2-3 tsp half and half (or milk alternative of your choice)
- 1 cup ice water

How to make
Just like the peppermint mocha recipe, you can simply place everything in a blender and blend for 15 seconds. Or if you want to be detailed with how you place the ingredients in the blender this is how I do it:
- instant coffee
- molasses (drizzling it over the instant coffee)
- raw sugar
- ground spices (cinnamon, ginger and cloves, in any order).
- half/half (or milk alternative)
- ice water
