Thai soups are a favorite in our family! This basic homemade Thai soup broth recipe will allow you to make a delicious soup with whatever other ingredients you have in the pantry.
We love Thai Food!
I started cooking from scratch because it is hard to find delicious dishes that are both gluten-free and dairy-free. Most Thai food is naturally both! Thai food typically doesn’t have dairy in it, but coconut milk is used instead. Also, the main starches or carbs used in meals are rice or potatoes which are naturally gluten-free.
Besides these amazing qualities, I just love the flavors! Curry ginger, garlic, onion, and peanuts just tickle my tastebuds!
Use this broth as a base the add in your ingredients!
Cooking from scratch can be a lot of work if you are always following a recipe. It gets significantly easier when you get to the point where you don’t have to look at a recipe. You can just through some things together, whatever you have on hand, and know it will be something enjoyable.
That is my goal with this recipe! This homemade Thai soup broth base gives you something to get familiar with. It’s a great soup starter. Then you can add whatever veggies, meat, or starches you have on hand.
Another perk of getting familiar with a basic soup broth is that when you get familiar enough with the ingredients and Thai flavors you can play around with it. You can add a little extra ginger, or substitute lime for lemons, or leave out the garlic. You won’t feel tied to a recipe card. It won’t take you an hour to make a meal because you won’t have to read the recipe 10 times before you are done cooking. You just guestimate and throw things together!
What you will need.
Here are some of the standard kitchen tools you will need to make this recipe. One new tool I am introducing is a dutch oven! When I share my sourdough bread recipes, I will mention how often I use my dutch oven.
Dutch ovens are great for so many things including soups! They are sturdy, high quality, and can take a lot of heat, frying, and simmering from your soups.
Other tools you will need:
- Chopping Knives
- Measuring spoons and cups
- Cutting boards
- Soup kettle (if you are not using a dutch oven).
Ingredients for Homemade Thai Soup Broth
Broth Base
- 2 tsp cooking oil (avocado, olive, coconut or grapeseed are best).
- 3 cloves of garlic
- 1 tsp curry paste (red or green)
- 2 tsp grated ginger (I use the pre-grated squeeze tubes)
- 6 cups of broth (I prefer homemade bone broth for health benefits, but any broth with do)
- 1 can of coconut milk
- 2 tsp soy sauce
- 2 tbsp honey
- lime juice to taste
- 1/2 cup peanut butter
Veggies
For this particular soup, I used whatever I had on hand. I used carrots, peas, green beans, onions, and kale. I have also used bell peppers, mushrooms, zucchini, and green onions.
Meat and Starches
You can also use whatever meats and starches you have on hand to make this soup what you want! I used one chicken thigh leftover from our dinner the night before. Chicken is always a safe bet with Thai food in my opinion. Pork and shrimp also taste great with Thai food.
For starches, any form of rice or potatoes will do. I used Thai Kitchen’s vermicelli noodles because they are my favorite. But you can try rice noodles, ramen noodles, rice or potatoes. All are good options.
Instructions
- Wash and chop your veggies.
- In a dutch oven or a large soup kettle, heat 2 tsp of cooking oil.
- When oil is heated, add in chopped veggies and cook them until they are a tad softer (usually about 5 minutes). They do not need to be tender or overly soft yet because they will continue to cook in the broth.
- Add garlic and cook until fragrant (about 30 seconds).
- Add the rest of the seasonings: curry paste, ginger, soy sauce, and cook for about 2 minutes.
- Add in 4 cups of the broth and save 2 cups for the next step.
- Then with the remaining 2 cups of broth, whisk in peanut butter until it is a smooth consistency. It’s okay if there are some lumps in it. Add the mixture to the soup pot.
- Mix all together. Cover and let the pot get up to a soft boil.
- Add can of coconut milk.
- When it is boiling add in your meat and starch.
- Finally add in the lime juice to taste. You can also add more soy sauce at this point if you want more flavor.
