Having a cheap and healthy homemade mayo in your repertoire is so helpful when starting to cook from scratch! This homemade mayo is a great creamy mayo to add to your deli sandwiches for a quick lunch, or to a noodle salad. And bonus, it’s super inexpensive to make.

Making as much as you can from scratch!
One of the best ways to start eating healthier is making as many things as you can from scratch. Something like mayo, bread, bone broth, and yogurt are such staples in most kitchens. Why not make them yourself and save some money, and benefit your health?!
These are some of the foods at the store that have so many extra processed ingredients or tons of sugar to make them last longer on the shelf. It’s no secret making something yourself is so much better for you!
But the great thing is, it’s cheaper too!

Saving money is a perk.
The things that I think really save you money when you make them from home are things like bread, bone broth, yogurt, sauerkraut, kombucha and this mayo.
The main ingredients in homemade mayo are eggs, lemon juice, salt, mustard and oil. Super simple ingredients.
Eggs are cheap and when you only need 1 egg, we are talking pennies per batch to make mayo.
Ingredients:
1 Egg
1 Cup Oil of choice (see below for my recommendations)
1/4 tsp mustard (regular or dijon)
1/4 tsp salt
Juice of 1/2 a lemon.

Oil Recommendations
As mentioned in my Chipotle Aioli recipe there are some oils that are best for making something like a mayo or an aioli.
The best and healthiest oils to use are:
Avocado oil
Olive oil
Grapseed Oil
Other oils you can use but aren’t quite as healthy are:
Canola Oil
Pure Vegetable Oil
All of these oils are great for blending. Avocado, grapeseed, canola, and vegetable oil all have a mild flavors which make them great for making mayo.
Instructions
I am going to give you instructions on how to make this mayo in a mason jar with an immersion blender. But you can make this in a food processor too with a slow pour feature (read in the next section).
In a wide mouth mason jar, crack 1 egg.
Add mustard, salt, lemon juice and oil, with out mixing.
Take your immersion blender and submerge it to the bottom of the glass where the egg is.
Turn it on, and keep it there until the egg turns white.
Then slowly move the blender wand up through the oil. This will incorporate the rest of the oil until it is all blended and you have a nice fluffy mayo!

Instructions for a making homemade mayo in a food processor.
Crack your egg into the bowl of the food processor
Add in lemon juice, salt, and mustard.
Then turn it on to blend for about 10 seconds. It won’t take long to incorporate.
Then using a the slow pour feature, slowly pour in the 1 cup of oil.
** Pouring slowly is really important here so that the egg and the oil emulsify.
Once the oil is all poured, you will have a nice creamy and fluffy mayo!
